test: switch Molecule tests from Podman to Lima ... 9278b24f51

I used Podman before because that's what the Molecule documentation used, and it
was simpler to follow along. However, there was a few minor issues with this:

1. It adds unneccesary differences between the test environment and dev
   environment. The roles are intended to be run in Lima afterall, not Podman.
   There are subtle differences between them.
2. It adds complicated to the Docker scenario. The reason we use VMs instead of
   containers is specifically to avoid a DIND/PIND scenario, but if I'm going to
   so I'd like to avoid DIND/PIND in the tests too.

Overall, I think this is better anyway as it's one less dependency/binary
required to contribute to the project. To use the project, the user has to have
Lima already anyway, so we can reuse this instead of tacking other
virtualization tools on top.
